Ingredients
- 1 large head of cabbage
- 1 cup of rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups chicken or vegetable broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove and set aside to cool.
- In a bowl, mix the rice, ground meat, onion, tomatoes, parsley, dill, cumin, coriander, salt, and pepper until well combined.
- Place a spoonful of the rice and meat mixture onto each cabbage leaf and roll them up, tucking in the sides to create a tight roll.
- Place the stuffed cabbage rolls in a large pot, seam side down. Pour the tomato sauce and broth over the rolls, covering them completely.
- Cover the pot and cook the stuffed cabbage rolls over low heat for 1 hour, or until the rice is fully cooked and the cabbage is tender.
- Serve the Dolma-e Kalam hot, garnished with fresh herbs and accompanied by a side of yogurt or salad.
