Hazaragi Stuffed Mushrooms (Dolma-e Gharch)

Ingredients

  • 12 large mushrooms
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and finely chop them.
  3. In a bowl, combine the cooked rice, chopped mushroom stems, onion, tomato, parsley, cilantro, walnuts, cumin, coriander, salt, and pepper.
  4. Stuff each mushroom cap with the rice mixture and place them in a baking dish.
  5. Drizzle the stuffed mushrooms with olive oil and bake for 25 minutes, or until the mushrooms are tender.
  6. Serve the Dolma-e Gharch hot and enjoy!
