Hazaragi Stuffed Swiss Chard Rolls (Dolma-e Esfenaj)

Ingredients

  • 1 bunch Swiss chard leaves
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool.
  2. In a bowl, mix the cooked rice, chopped onion, diced tomatoes, fresh dill, fresh mint, olive oil, ground cumin, paprika, salt, and pepper.
  3. Place a spoonful of the rice mixture onto each blanched chard leaf, then roll them up into tight rolls.
  4. Place the stuffed chard rolls in a pot, seam side down, and pour the lemon juice over them.
  5. Add enough water to the pot to cover the rolls, then cover and simmer for 45 minutes.
  6. Once cooked, remove the stuffed chard rolls from the pot and serve hot.
