Hazaragi Stuffed Swiss Chard Rolls (Dolma-e Esfenaj)
Dolma-e Esfenaj, or Hazaragi Stuffed Swiss Chard Rolls, is a traditional dish from Hazaragi Cuisine. These delicious stuffed chard rolls are filled with a flavorful mixture of rice, herbs, and spices, making them a perfect appetizer or main course.
Ingredients
- 1 bunch Swiss chard leaves
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool.
- In a bowl, mix the cooked rice, chopped onion, diced tomatoes, fresh dill, fresh mint, olive oil, ground cumin, paprika, salt, and pepper.
- Place a spoonful of the rice mixture onto each blanched chard leaf, then roll them up into tight rolls.
- Place the stuffed chard rolls in a pot, seam side down, and pour the lemon juice over them.
- Add enough water to the pot to cover the rolls, then cover and simmer for 45 minutes.
- Once cooked, remove the stuffed chard rolls from the pot and serve hot.
