Dolma-e Kadoo, also known as Hazaragi Stuffed Zucchini, is a traditional dish from Hazaragi Cuisine. This flavorful and aromatic dish is made by stuffing zucchini with a delicious mixture of rice, ground meat, and a blend of spices.

Hazaragi Stuffed Zucchini (Dolma-e Kadoo)

Ingredients

  • 4 medium zucchinis
  • 1 cup ground beef or lamb
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity.
  3. In a bowl, mix the ground meat, rice, onion, tomatoes, dill, mint, olive oil, turmeric, cumin, salt, and pepper.
  4. Stuff the zucchinis with the meat and rice mixture.
  5. Place the stuffed zucchinis in a deep pot and pour the chicken or vegetable broth over them.
  6. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  7. Serve the Dolma-e Kadoo hot, garnished with fresh herbs if desired.
