Hazaragi Stuffed Zucchini (Dolma-e Kadoo)
Dolma-e Kadoo, also known as Hazaragi Stuffed Zucchini, is a traditional dish from Hazaragi Cuisine. This flavorful and aromatic dish is made by stuffing zucchini with a delicious mixture of rice, ground meat, and a blend of spices.
Ingredients
- 4 medium zucchinis
- 1 cup ground beef or lamb
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity.
- In a bowl, mix the ground meat, rice, onion, tomatoes, dill, mint, olive oil, turmeric, cumin, salt, and pepper.
- Stuff the zucchinis with the meat and rice mixture.
- Place the stuffed zucchinis in a deep pot and pour the chicken or vegetable broth over them.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Serve the Dolma-e Kadoo hot, garnished with fresh herbs if desired.
