Ingredients

  • 1 block of firm tofu
  • 4 cups of vegetable broth
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1/2 cup of sliced shiitake mushrooms
  • 1/4 cup of sliced bamboo shoots
  • 2 green onions, thinly sliced
  • 1 teaspoon of grated ginger
  • 1 teaspoon of cornstarch
  • 2 tablespoons of water

Instructions

  1. Press the tofu to remove excess water, then slice it into thin rectangles.
  2. In a pot, bring the vegetable broth to a simmer and add the soy sauce, sesame oil, mushrooms, bamboo shoots, green onions, and ginger.
  3. Gently add the tofu slices to the simmering broth and let them cook for 5 minutes.
  4. In a small bowl, mix the cornstarch and water to create a slurry, then stir it into the soup to thicken the broth slightly.
  5. Serve the soup hot, making sure to arrange the tofu slices in the shape of a lotus blossom in each bowl.
