He Ye Fan (lotus Leaf Rice)
He Ye Fan, also known as Lotus Leaf Rice, is a traditional dish from Guangxi Cuisine. It is a flavorful and aromatic dish that is commonly enjoyed during special occasions and festivals.
Ingredients
- 2 cups glutinous rice
- 4 dried lotus leaves
- 1 cup diced chicken (or tofu for vegetarian option)
- 1/2 cup diced Chinese sausage (optional)
- 2 dried shiitake mushrooms, soaked and diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 cups chicken broth
Instructions
- Rinse the glutinous rice and soak in water for 2 hours. Drain and set aside.
- Soak the dried lotus leaves in hot water for 30 minutes, then cut off the hard stems and set aside.
- In a wok, stir-fry the chicken (or tofu), Chinese sausage, shiitake mushrooms, and garlic until cooked.
- Add the soaked glutinous rice to the wok and stir in the soy sauce, oyster sauce, sugar, salt, and white pepper.
- Transfer the rice mixture to the lotus leaves, wrap them into tight parcels, and secure with kitchen twine.
- Place the wrapped lotus leaf rice in a steamer and steam for 1 hour.
- Unwrap the lotus leaf rice parcels and serve hot.
