Healthy Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, Greek yogurt, honey or maple syrup, and vanilla extract.
  3. In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped nuts, if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
