Healthy Cinnamon Rolls

Ingredients

  • 2 cups whole wheat flour
  • 1/4 cup coconut sugar
  • 1 tbsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup unsweetened almond milk
  • 2 tbsp coconut oil, melted
  • 1 packet active dry yeast
  • 1/4 cup warm water
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract

Instructions

  1. In a small bowl, combine the warm water and yeast. Let it sit for 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour, coconut sugar, cinnamon, and salt.
  3. In a separate bowl, mix the almond milk, melted coconut oil, applesauce, and vanilla extract.
  4. Add the yeast mixture to the wet ingredients and stir to combine.
  5. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  6. Knead the dough on a floured surface for 5 minutes, then place it in a greased bowl and cover with a towel. Let it rise for 1 hour.
  7. Roll out the dough into a rectangle, sprinkle with cinnamon and coconut sugar, then roll it up and slice into 12 rolls.
  8. Place the rolls in a greased baking dish and let them rise for another 30 minutes.
  9. Bake at 350°F for 25 minutes or until golden brown.
