Hearty Bean Stew (cassoulet)

Ingredients

  • 1 lb dried white beans
  • 4 duck legs
  • 4 sausages (such as Toulouse or garlic sausage)
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Soak the dried beans in water overnight.
  2. Preheat the oven to 350°F (175°C).
  3. Season the duck legs with salt and pepper, then brown them in a large Dutch oven over medium heat. Remove and set aside.
  4. Add the sausages to the Dutch oven and brown them. Remove and set aside.
  5. Sauté the onion, garlic, carrots, and celery in the same Dutch oven until softened.
  6. Stir in the diced tomatoes, chicken broth, bay leaves, and thyme. Add the soaked beans, duck legs, and sausages back to the pot.
  7. Bring the stew to a simmer, then cover and transfer to the preheated oven. Cook for 1.5 to 2 hours, or until the beans are tender.
  8. Season with salt and pepper to taste before serving.
