Hearty Bean Stew (cassoulet)
This Hearty Bean Stew, also known as Cassoulet, is a classic French dish that is perfect for a cozy evening meal. It's a comforting and flavorful stew made with beans, meats, and aromatic vegetables.
Ingredients
- 1 lb dried white beans
- 4 duck legs
- 4 sausages (such as Toulouse or garlic sausage)
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Soak the dried beans in water overnight.
- Preheat the oven to 350°F (175°C).
- Season the duck legs with salt and pepper, then brown them in a large Dutch oven over medium heat. Remove and set aside.
- Add the sausages to the Dutch oven and brown them. Remove and set aside.
- Sauté the onion, garlic, carrots, and celery in the same Dutch oven until softened.
- Stir in the diced tomatoes, chicken broth, bay leaves, and thyme. Add the soaked beans, duck legs, and sausages back to the pot.
- Bring the stew to a simmer, then cover and transfer to the preheated oven. Cook for 1.5 to 2 hours, or until the beans are tender.
- Season with salt and pepper to taste before serving.
