Heavenly Beshbarmak (Бешбармак)
Beshbarmak is a traditional Kyrgyz dish that translates to "five fingers" in reference to the way it is traditionally eaten - with your hands. This heavenly dish consists of tender boiled meat, homemade noodles, and flavorful broth, making it a beloved comfort food in Kyrgyz cuisine.
Ingredients
- 1 kg lamb or beef, cut into large pieces
- 1 onion, peeled and halved
- 2 carrots, peeled and halved
- 2 bay leaves
- 1 tsp salt
- 500g all-purpose flour
- 2 eggs
- Water
- Salt to taste
Instructions
- In a large pot, combine the meat, onion, carrots, bay leaves, and salt. Cover with water and bring to a boil. Reduce heat and simmer for 1.5 hours, or until the meat is tender.
- While the meat is cooking, prepare the noodles. In a large bowl, combine the flour, eggs, and a pinch of salt. Gradually add water and knead until a smooth dough forms. Roll out the dough and cut into thin strips.
- Once the meat is tender, remove it from the broth and shred it into bite-sized pieces. Strain the broth and discard the solids.
- Return the broth to the pot and bring to a gentle boil. Add the noodles and cook for 5-7 minutes, or until they are tender.
- Divide the noodles among serving bowls and top with the shredded meat. Ladle the hot broth over the noodles and meat. Serve hot and enjoy!
