Ingredients
- 1 cup heavy cream
- 1/2 cup sugar
- 4 egg yolks
- 1 vanilla bean, split and scraped
- Pinch of salt
Instructions
- In a saucepan, combine the heavy cream, sugar, vanilla bean, and salt. Heat over medium heat until the mixture just begins to simmer.
- In a separate bowl, whisk the egg yolks. Gradually pour the hot cream mixture into the egg yolks, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a bowl. Discard the vanilla bean.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
- Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours before serving.
