Ingredients
- 4 cups granulated sugar
- 1 cup water
- 1 cup cornstarch
- 1 cup powdered sugar
- 1 teaspoon rose water
- 1 cup chopped pistachios (optional, for garnish)
Instructions
- In a saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar dissolves.
- In a separate bowl, mix the cornstarch with 1 cup of water until smooth.
- Slowly pour the cornstarch mixture into the saucepan with the sugar syrup, stirring constantly.
- Cook the mixture over medium heat, stirring continuously, until it thickens and becomes translucent (about 15-20 minutes).
- Remove the mixture from the heat and stir in the rose water.
- Pour the mixture into a greased 9x9 inch pan and smooth the top. Let it cool at room temperature for 2 hours.
- Once set, cut the loukoumia into squares and dust with powdered sugar. Optionally, sprinkle chopped pistachios on top.
- Store the loukoumia in an airtight container at room temperature for up to a week.
