Heavenly Hyderabadi Chicken Dum Biryani

Ingredients

  • 2 lbs chicken, cut into pieces
  • 3 cups basmati rice, soaked for 30 minutes
  • 1 cup yogurt
  • 2 onions, thinly sliced and fried until golden
  • 4 tomatoes, chopped
  • 1/4 cup mint leaves
  • 1/4 cup cilantro leaves
  • 1/2 cup ghee
  • Whole spices: bay leaves, cardamom, cinnamon, cloves
  • 1/2 teaspoon saffron strands, soaked in 1/4 cup warm milk
  • Salt to taste

Instructions

  1. Marinate the chicken with yogurt, fried onions, tomatoes, mint, cilantro, and salt. Let it marinate for 1 hour.
  2. Parboil the soaked rice with whole spices and salt. Drain and set aside.
  3. Layer the marinated chicken and parboiled rice in a heavy-bottomed pot. Drizzle ghee and saffron milk on top.
