Ingredients
- 2 lbs chicken, cut into pieces
- 3 cups basmati rice, soaked for 30 minutes
- 1 cup yogurt
- 2 onions, thinly sliced and fried until golden
- 4 tomatoes, chopped
- 1/4 cup mint leaves
- 1/4 cup cilantro leaves
- 1/2 cup ghee
- Whole spices: bay leaves, cardamom, cinnamon, cloves
- 1/2 teaspoon saffron strands, soaked in 1/4 cup warm milk
- Salt to taste
Instructions
- Marinate the chicken with yogurt, fried onions, tomatoes, mint, cilantro, and salt. Let it marinate for 1 hour.
- Parboil the soaked rice with whole spices and salt. Drain and set aside.
- Layer the marinated chicken and parboiled rice in a heavy-bottomed pot. Drizzle ghee and saffron milk on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 45 minutes to 1 hour, allowing the flavors to meld together.
- Gently mix the layers before serving to ensure the flavors are evenly distributed.
