Ingredients

  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 8 oz shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix soy sauce, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add garlic and ginger, and stir-fry for 1 minute.
  4. Add mushrooms and stir-fry for 3-4 minutes until they start to brown.
  5. Add asparagus and continue to stir-fry for another 3-4 minutes until asparagus is tender-crisp.
  6. Pour the soy sauce mixture over the vegetables and stir to coat evenly. Cook for another 1-2 minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
