Heavenly Mushroom And Asparagus Stir-fry
This Heavenly Mushroom and Asparagus Stir-Fry is a delightful dish from Chinese Buddhist Cuisine that is not only delicious but also nutritious and easy to prepare.
Ingredients
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 8 oz shiitake mushrooms, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp cornstarch
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix soy sauce, sesame oil, and cornstarch. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add garlic and ginger, and stir-fry for 1 minute.
- Add mushrooms and stir-fry for 3-4 minutes until they start to brown.
- Add asparagus and continue to stir-fry for another 3-4 minutes until asparagus is tender-crisp.
- Pour the soy sauce mixture over the vegetables and stir to coat evenly. Cook for another 1-2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
