Heavenly Mushroom And Tofu Stir-fry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of mixed mushrooms (such as shiitake, oyster, and button), sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 1/4 cup of vegetable broth
  • 2 green onions, chopped (for garnish)
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a small bowl, mix the soy sauce, sesame oil, and cornstarch. Set aside.
  3. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.
  4. In the same pan, add a bit more oil if needed, then sauté the onions, garlic, and ginger until fragrant.
  5. Add the mushrooms and cook until they release their juices and start to brown.
  6. Pour in the vegetable broth and the soy sauce mixture. Stir well and let it simmer for a few minutes until the sauce thickens.
  7. Return the tofu to the pan and toss to coat with the sauce. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve hot.
