Heavenly Shorpo (Шорпо)
Шорпо (Heavenly Shorpo) is a traditional Kyrgyz soup that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1 kg lamb, cut into pieces
- 3 onions, chopped
- 4 carrots, sliced
- 4 potatoes, peeled and cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1 bay leaf
- 2 liters water
Instructions
- In a large pot, combine the lamb, onions, carrots, potatoes, salt, black pepper, cumin, and bay leaf.
- Pour in the water and bring to a boil over medium heat.
- Reduce the heat to low and simmer for 1 hour, or until the meat is tender.
- Skim off any foam that rises to the surface during cooking.
- Remove the bay leaf before serving.
