Шорпо (Heavenly Shorpo) is a traditional Kyrgyz soup that is hearty, flavorful, and perfect for warming up on a cold day.

Heavenly Shorpo (Шорпо)

Ingredients

  • 1 kg lamb, cut into pieces
  • 3 onions, chopped
  • 4 carrots, sliced
  • 4 potatoes, peeled and cubed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 bay leaf
  • 2 liters water

Instructions

  1. In a large pot, combine the lamb, onions, carrots, potatoes, salt, black pepper, cumin, and bay leaf.
  2. Pour in the water and bring to a boil over medium heat.
  3. Reduce the heat to low and simmer for 1 hour, or until the meat is tender.
  4. Skim off any foam that rises to the surface during cooking.
  5. Remove the bay leaf before serving.
