Heavenly Uzgen Pilaf (Узгенский плов)
Узгенский плов, or Heavenly Uzgen Pilaf, is a traditional dish from Kyrgyz cuisine that is known for its rich flavors and aromatic spices. This hearty and satisfying pilaf is a staple in Kyrgyzstan and is often served at special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 1 lb lamb, cut into chunks
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 4 cups water or lamb broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and coriander seeds, and cook until fragrant.
- Add the sliced onion and cook until golden brown.
- Add the chunks of lamb and cook until browned on all sides.
- Stir in the julienned carrots, ground turmeric, ground cinnamon, salt, and pepper. Cook for a few minutes until the carrots are slightly softened.
- Add the basmati rice to the pot and stir to coat the rice with the oil and spices.
- Pour in the water or lamb broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and let it rest for 5-10 minutes before serving.
