Heavenly Uzgen Pilaf (Узгенский плов)

Узгенский плов, or Heavenly Uzgen Pilaf, is a traditional dish from Kyrgyz cuisine that is known for its rich flavors and aromatic spices. This hearty and satisfying pilaf is a staple in Kyrgyzstan and is often served at special occasions and gatherings.

Heavenly Uzgen Pilaf (Узгенский плов)

Ingredients

  • 2 cups basmati rice
  • 1 lb lamb, cut into chunks
  • 1 large onion, thinly sliced
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 4 cups water or lamb broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and coriander seeds, and cook until fragrant.
  2. Add the sliced onion and cook until golden brown.
  3. Add the chunks of lamb and cook until browned on all sides.
  4. Stir in the julienned carrots, ground turmeric, ground cinnamon, salt, and pepper. Cook for a few minutes until the carrots are slightly softened.
  5. Add the basmati rice to the pot and stir to coat the rice with the oil and spices.
  6. Pour in the water or lamb broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes until the rice is cooked and the liquid is absorbed.
  7. Fluff the pilaf with a fork and let it rest for 5-10 minutes before serving.
