Ingredients

  • 4 cups chicken or vegetable broth
  • 100g firm tofu, diced
  • 50g wood ear mushrooms, soaked and sliced
  • 50g bamboo shoots, sliced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1 teaspoon ground white pepper
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • 2 green onions, thinly sliced
  • Salt to taste

Instructions

  1. In a pot, bring the broth to a boil.
  2. Add the tofu, wood ear mushrooms, and bamboo shoots. Simmer for 5 minutes.
  3. Stir in the soy sauce, vinegar, white pepper, sesame oil, and sugar.
  4. Slowly pour in the beaten eggs while stirring the soup gently.
  5. Stir in the cornstarch mixture to thicken the soup.
  6. Season with salt to taste.
  7. Garnish with green onions before serving.
