Ingredients

- 100g firm tofu, diced

- 2 tablespoons Chinkiang vinegar
- 1 teaspoon ground white pepper
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- 2 green onions, thinly sliced
- Salt to taste
Instructions
- In a pot, bring the broth to a boil.
- Add the tofu, wood ear mushrooms, and bamboo shoots. Simmer for 5 minutes.
- Stir in the soy sauce, vinegar, white pepper, sesame oil, and sugar.
- Slowly pour in the beaten eggs while stirring the soup gently.
- Stir in the cornstarch mixture to thicken the soup.
- Season with salt to taste.
- Garnish with green onions before serving.
