Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup finely ground hazelnuts
- 2 tablespoons instant coffee granules
- 1/4 cup hot water
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, dissolve the instant coffee granules in hot water. Stir in the ground hazelnuts and set aside.
- In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until just combined.
- Divide the batter in half. Fold the coffee-hazelnut mixture into one half of the batter.
- Fill each cupcake liner with a spoonful of the plain batter, followed by a spoonful of the coffee-hazelnut batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool before serving.
