Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup finely ground hazelnuts
  • 2 tablespoons instant coffee granules
  • 1/4 cup hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, dissolve the instant coffee granules in hot water. Stir in the ground hazelnuts and set aside.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter in half. Fold the coffee-hazelnut mixture into one half of the batter.
  7. Fill each cupcake liner with a spoonful of the plain batter, followed by a spoonful of the coffee-hazelnut batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool before serving.
