Ingredients
- 1 lb stewing beef, cut into cubes
- 2 cups chopped fresh parsley
- 1 cup chopped fresh cilantro
- 1/2 cup chopped fresh chives
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp ground fenugreek
- 1/2 tsp ground black pepper
- 1/4 cup dried black limes (limoo amani)
- 2 cups water
- Salt to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
- Add the cubed beef to the pot and brown on all sides.
- Stir in the minced garlic, turmeric, ground fenugreek, and black pepper. Cook for a few minutes until fragrant.
- Add the chopped parsley, cilantro, and chives to the pot. Stir well to combine with the meat and spices.
- Add the dried black limes and water to the pot. Season with salt to taste.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning if needed and serve the herb stew with steamed basmati rice.
