Ingredients

  • 1 lb stewing beef, cut into cubes
  • 2 cups chopped fresh parsley

  • 1/2 cup chopped fresh chives
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp ground fenugreek
  • 1/2 tsp ground black pepper
  • 1/4 cup dried black limes (limoo amani)
  • 2 cups water
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the cubed beef to the pot and brown on all sides.
  3. Stir in the minced garlic, turmeric, ground fenugreek, and black pepper. Cook for a few minutes until fragrant.
  4. Add the chopped parsley, cilantro, and chives to the pot. Stir well to combine with the meat and spices.
  5. Add the dried black limes and water to the pot. Season with salt to taste.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Adjust the seasoning if needed and serve the herb stew with steamed basmati rice.
