Herm Island Crab Bisque

Ingredients

  • 1 lb fresh Herm Island crab meat
  • 2 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups fish stock
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Sprinkle the flour over the onion and garlic, and cook for 2 minutes, stirring constantly.

  4. Add the crab meat to the pot and simmer for 20 minutes, stirring occasionally.
  5. Stir in the heavy cream and season the bisque with salt and pepper to taste.
  6. Simmer for an additional 10 minutes, then remove the pot from the heat.
  7. Using an immersion blender, purée the bisque until smooth.
  8. Return the pot to low heat and warm the bisque through.
  9. Serve the Herm Island Crab Bisque hot, garnished with chopped fresh parsley.
