Ingredients
- 1 lb fresh Herm Island crab meat
- 2 tbsp butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 4 cups fish stock
- 1/2 cup dry white wine
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

- Stir in the heavy cream and season the bisque with salt and pepper to taste.
- Simmer for an additional 10 minutes, then remove the pot from the heat.
- Using an immersion blender, purée the bisque until smooth.
- Return the pot to low heat and warm the bisque through.
- Serve the Herm Island Crab Bisque hot, garnished with chopped fresh parsley.
