Ingredients
- 1 lb fresh haddock fillets, cut into chunks
- 2 tbsp butter
- 1 onion, diced
- 2 garlic cloves, minced
- 2 large potatoes, peeled and diced
- 3 cups fish or vegetable broth
- 1 cup heavy cream
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until softened.
- Add the diced potatoes and fish or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Add the haddock chunks to the pot and simmer for a few minutes until the fish is cooked through.
- Pour in the heavy cream, add the bay leaf, and season with salt and pepper. Simmer for an additional 5-10 minutes.
- Remove the bay leaf and ladle the chowder into bowls. Garnish with fresh parsley and serve hot.
