Ingredients

  • 1 lb fresh haddock fillets, cut into chunks
  • 2 tbsp butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 large potatoes, peeled and diced
  • 3 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  2. Add the diced potatoes and fish or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Add the haddock chunks to the pot and simmer for a few minutes until the fish is cooked through.
  4. Pour in the heavy cream, add the bay leaf, and season with salt and pepper. Simmer for an additional 5-10 minutes.
  5. Remove the bay leaf and ladle the chowder into bowls. Garnish with fresh parsley and serve hot.
