Hezi (xinjiang Style Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 lb ground lamb or beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix together the ground meat, cooked rice, chopped onion, garlic, cumin, paprika, cinnamon, salt, and pepper.
  3. Stuff the bell peppers with the meat and rice mixture.
  4. Heat the vegetable oil in a large skillet over medium heat. Place the stuffed bell peppers in the skillet and cook for 5 minutes, then add 1 cup of water to the skillet.
  5. Cover and simmer for 40 minutes, or until the peppers are tender and the filling is cooked through.
  6. Serve the Hezi hot, with a side of yogurt or salad if desired.
