Highland Hot Toddy Chicken

Ingredients

  • 4 chicken breasts
  • 2 tablespoons honey
  • 1 lemon, juiced
  • 1/2 cup Scotch whisky
  • 2 cinnamon sticks
  • 4 cloves
  • 1 teaspoon grated ginger
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine water, honey, lemon juice, whisky, cinnamon sticks, cloves, and grated ginger. Bring to a simmer over medium heat.
  2. Add the chicken breasts to the pot and season with salt and pepper. Cover and let it simmer for 45-50 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and let it rest for a few minutes before slicing.
  4. Strain the liquid from the pot and serve it as a warm sauce over the sliced chicken.
