Highland Hot Toddy Chicken

Ingredients
- 4 chicken breasts
- 2 tablespoons honey
- 1 lemon, juiced
- 1/2 cup Scotch whisky
- 2 cinnamon sticks
- 4 cloves
- 1 teaspoon grated ginger
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, combine water, honey, lemon juice, whisky, cinnamon sticks, cloves, and grated ginger. Bring to a simmer over medium heat.
- Add the chicken breasts to the pot and season with salt and pepper. Cover and let it simmer for 45-50 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and let it rest for a few minutes before slicing.
- Strain the liquid from the pot and serve it as a warm sauce over the sliced chicken.
