Ingredients
- 1 lb hiromeri (Cypriot cured pork)
- 4 large potatoes, peeled and cut into chunks
- 1/2 cup olive oil
- 1/4 cup red wine vinegar

- Salt and pepper to taste
Instructions
- Place the hiromeri in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the potatoes to the pot and continue to simmer for an additional 20 minutes, or until the potatoes are tender.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
- Drain the hiromeri and potatoes, then place them in a serving dish. Pour the dressing over the hiromeri and potatoes, tossing gently to coat.
- Serve the hiromeri hot or at room temperature, with crusty bread and a green salad on the side.
