Ingredients

  • 1 lb hiromeri (Cypriot cured pork)

Instructions

  2. Add the potatoes to the pot and continue to simmer for an additional 20 minutes, or until the potatoes are tender.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
  4. Drain the hiromeri and potatoes, then place them in a serving dish. Pour the dressing over the hiromeri and potatoes, tossing gently to coat.
  5. Serve the hiromeri hot or at room temperature, with crusty bread and a green salad on the side.
