Ingredients

  • 500g smoked pork, cut into cubes
  • 1 cup fermented bamboo shoots
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 inch ginger, grated
  • 4-5 cloves garlic, minced
  • 1 tomato, chopped
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 tbsp mustard oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add the chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
  2. Add the smoked pork cubes and cook until they are browned on all sides.
  3. Stir in the turmeric powder, red chili powder, and salt. Mix well.
  4. Add the fermented bamboo shoots and chopped tomato. Cook for a few minutes.
  5. Pour in a cup of water, cover the pan, and let it simmer for about an hour or until the pork is tender.
  6. Garnish with fresh coriander leaves and serve hot with steamed rice.
