Hmarcha Bai (smoked Pork With Bamboo Shoots)
Hmarcha Bai is a traditional Tripuri dish that features tender smoked pork cooked with bamboo shoots, creating a flavorful and aromatic dish that is perfect for a hearty meal.
Ingredients
- 500g smoked pork, cut into cubes
- 1 cup bamboo shoots, sliced
- 2 tbsp mustard oil
- 1 onion, finely chopped
- 2-3 green chilies, slit
- 1 inch ginger, grated
- 3-4 cloves garlic, minced
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste

Instructions
- Heat mustard oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions are translucent.
- Add the smoked pork cubes and cook until they are browned on all sides.
- Stir in the turmeric powder, red chili powder, and salt. Cook for a few minutes.
- Add the sliced bamboo shoots and enough water to cover the pork. Cover and simmer for 1.5 to 2 hours until the pork is tender.
- Adjust the seasoning and serve hot with steamed rice.
