Ingredients

  • 500g smoked pork, cut into cubes
  • 1 cup bamboo shoots, sliced
  • 2 tbsp mustard oil
  • 1 onion, finely chopped
  • 2-3 green chilies, slit
  • 1 inch ginger, grated
  • 3-4 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Water

Instructions

  1. Heat mustard oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions are translucent.
  2. Add the smoked pork cubes and cook until they are browned on all sides.
  3. Stir in the turmeric powder, red chili powder, and salt. Cook for a few minutes.
  4. Add the sliced bamboo shoots and enough water to cover the pork. Cover and simmer for 1.5 to 2 hours until the pork is tender.
  5. Adjust the seasoning and serve hot with steamed rice.
