Hmarcha Khar (smoked Pork Belly)
Hmarcha Khar is a traditional smoked pork belly dish from Tripuri Cuisine, known for its rich and flavorful taste. This dish is a perfect combination of tender pork belly and aromatic spices, making it a favorite among pork lovers.
Ingredients
- 1 kg pork belly, skin removed and cut into cubes
- 2 tbsp Hmarcha (Tripuri red chili paste)
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 2 cups water
Instructions
- In a large bowl, marinate the pork belly cubes with Hmarcha, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, and salt. Let it marinate for 1 hour.
- Heat a heavy-bottomed pan on the stovetop and add the marinated pork belly cubes. Sear the pork belly until it turns golden brown.
- Pour water into the pan and bring it to a boil. Reduce the heat, cover the pan, and let the pork belly simmer for 1.5 hours until it becomes tender.
- Once the pork belly is tender, remove the lid and increase the heat to dry out any excess liquid, stirring occasionally.
- Once the pork belly is dry and slightly charred, remove it from the heat and let it rest for a few minutes before serving.
