Hmarcha Khar (smoked Pork Belly)

Ingredients

  • 1 kg pork belly, skin removed and cut into cubes
  • 2 tbsp Hmarcha (Tripuri red chili paste)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 cups water

Instructions

  1. In a large bowl, marinate the pork belly cubes with Hmarcha, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, and salt. Let it marinate for 1 hour.
  2. Heat a heavy-bottomed pan on the stovetop and add the marinated pork belly cubes. Sear the pork belly until it turns golden brown.
  3. Pour water into the pan and bring it to a boil. Reduce the heat, cover the pan, and let the pork belly simmer for 1.5 hours until it becomes tender.
  4. Once the pork belly is tender, remove the lid and increase the heat to dry out any excess liquid, stirring occasionally.
  5. Once the pork belly is dry and slightly charred, remove it from the heat and let it rest for a few minutes before serving.
