Ingredients

  • 2 lbs pork ribs
  • 1/4 cup Hmarcha (Tripuri red chili paste)
  • 1/4 cup bamboo shoot paste
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Water for boiling

Instructions

  1. Boil the pork ribs in water for 15 minutes, then drain and set aside.
  2. In a bowl, mix Hmarcha, bamboo shoot paste, ginger-garlic paste, turmeric powder, and salt to make a marinade.
  3. Coat the boiled pork ribs with the marinade and let it sit for 1 hour.
  4. Smoke the marinated ribs over a stovetop for 1 hour, turning occasionally for even cooking.
  5. Once the ribs are tender and infused with smoky flavor, they are ready to serve.
