Hmarcha Paha is a traditional dish from Tripuri Cuisine, featuring tender smoked pork ribs with a flavorful marinade.
Ingredients
- 2 lbs pork ribs
- 1/4 cup Hmarcha (Tripuri red chili paste)
- 1/4 cup bamboo shoot paste
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- Salt to taste
- Water for boiling
Instructions
- Boil the pork ribs in water for 15 minutes, then drain and set aside.
- In a bowl, mix Hmarcha, bamboo shoot paste, ginger-garlic paste, turmeric powder, and salt to make a marinade.
- Coat the boiled pork ribs with the marinade and let it sit for 1 hour.
- Smoke the marinated ribs over a stovetop for 1 hour, turning occasionally for even cooking.
- Once the ribs are tender and infused with smoky flavor, they are ready to serve.
