Hmong-inspired Lemongrass Beef Skewers

Ingredients
- 1 lb beef sirloin, thinly sliced
- 3 stalks lemongrass, white parts only, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- 1 teaspoon ground black pepper
- 8 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the lemongrass, garlic, fish sauce, soy sauce, honey, vegetable oil, and black pepper to make the marinade.
- Add the sliced beef to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
