Hmong-inspired Lemongrass Chicken Lettuce Wraps
These Hmong-inspired Lemongrass Chicken Lettuce Wraps are a delicious and healthy dish that is perfect for a light lunch or dinner. The combination of lemongrass, chicken, and fresh vegetables wrapped in crisp lettuce leaves creates a refreshing and flavorful meal.
Ingredients
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 stalks lemongrass, finely chopped
- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped roasted peanuts
- 1 head butter lettuce, leaves separated
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, combine the chicken, lemongrass, fish sauce, soy sauce, lime juice, and garlic. Let marinate for 10 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the bell pepper and carrot. Cook for 2-3 minutes until slightly softened.
- Return the cooked chicken to the skillet and toss with the vegetables. Season with salt and pepper to taste.
- Remove the skillet from the heat and stir in the chopped cilantro, mint, and roasted peanuts.
- To serve, spoon the chicken mixture into the lettuce leaves and fold into wraps.
