Hmong-inspired Lemongrass Chicken Lettuce Wraps

Ingredients

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 stalks lemongrass, finely chopped
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts
  • 1 head butter lettuce, leaves separated
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the chicken, lemongrass, fish sauce, soy sauce, lime juice, and garlic. Let marinate for 10 minutes.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the bell pepper and carrot. Cook for 2-3 minutes until slightly softened.
  4. Return the cooked chicken to the skillet and toss with the vegetables. Season with salt and pepper to taste.
  5. Remove the skillet from the heat and stir in the chopped cilantro, mint, and roasted peanuts.
  6. To serve, spoon the chicken mixture into the lettuce leaves and fold into wraps.
