Hmong-inspired Lemongrass Shrimp Skewers

Ingredients
- 1 lb large shrimp, peeled and deveined
- 3-4 stalks lemongrass, outer layers removed and finely chopped
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 1 red chili, finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1/4 cup vegetable oil
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the lemongrass, garlic, shallot, red chili, fish sauce, soy sauce, brown sugar, and vegetable oil. Mix well to create the marinade.
- Add the shrimp to the marinade and toss to coat. Let the shrimp marinate for at least 15 minutes.
- Thread the marinated shrimp onto the soaked wooden skewers.
- Heat a grill or stovetop grill pan over medium-high heat. Cook the shrimp skewers for 2-3 minutes on each side, or until they are pink and opaque.
- Remove the shrimp skewers from the heat and season with salt and pepper to taste.
