Hmong-inspired Lemongrass Shrimp Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3-4 stalks lemongrass, outer layers removed and finely chopped
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 red chili, finely chopped
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1/4 cup vegetable oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the lemongrass, garlic, shallot, red chili, fish sauce, soy sauce, brown sugar, and vegetable oil. Mix well to create the marinade.
  2. Add the shrimp to the marinade and toss to coat. Let the shrimp marinate for at least 15 minutes.
  3. Thread the marinated shrimp onto the soaked wooden skewers.
  4. Heat a grill or stovetop grill pan over medium-high heat. Cook the shrimp skewers for 2-3 minutes on each side, or until they are pink and opaque.
  5. Remove the shrimp skewers from the heat and season with salt and pepper to taste.
