Hmong-inspired Sesame Ginger Tofu

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 green onions, thinly sliced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, ginger, and garlic.
- Place the tofu cubes in a large resealable plastic bag and pour the marinade over the tofu. Seal the bag and gently toss to coat the tofu. Marinate for at least 10 minutes.
- Remove the tofu from the bag, reserving the marinade. Sprinkle the tofu with cornstarch and toss to coat.
- Heat a large skillet over medium heat and add the tofu. Cook for 5-7 minutes, or until the tofu is golden and crispy.
- Pour the reserved marinade into the skillet and cook for an additional 2-3 minutes, or until the sauce has thickened.
- Remove from heat and sprinkle with green onions and sesame seeds. Season with salt and pepper to taste.
- Serve the sesame ginger tofu hot, with steamed rice or stir-fried vegetables.
