Hmong-inspired Spicy Shrimp Noodles

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sambal oelek (chili paste)
  • 1 teaspoon sugar
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving

Instructions

  1. In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the garlic, onion, and bell pepper, and cook until softened.
  3. Add the shrimp to the pan and cook until pink and opaque.
  4. Stir in the soy sauce, oyster sauce, sambal oelek, and sugar. Cook for an additional 2-3 minutes.
  5. Add the cooked rice noodles to the pan and toss to combine with the shrimp and vegetables.
  6. Remove from heat and garnish with chopped cilantro. Serve with lime wedges.
