Hmong-inspired Spicy Shrimp Noodles

Ingredients
- 1 pound shrimp, peeled and deveined
- 8 ounces rice noodles
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sambal oelek (chili paste)
- 1 teaspoon sugar
- 1/4 cup chopped cilantro
- Lime wedges, for serving
Instructions
- In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the garlic, onion, and bell pepper, and cook until softened.
- Add the shrimp to the pan and cook until pink and opaque.
- Stir in the soy sauce, oyster sauce, sambal oelek, and sugar. Cook for an additional 2-3 minutes.
- Add the cooked rice noodles to the pan and toss to combine with the shrimp and vegetables.
- Remove from heat and garnish with chopped cilantro. Serve with lime wedges.
