Hmong-inspired Spicy Tofu Noodles

Ingredients

  • 1 package of firm tofu, drained and cubed
  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 2 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tbsp sambal oelek (chili paste)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. Prepare the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the garlic and cook for 1 minute until fragrant.
  3. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes.
  4. Add the red bell pepper and snap peas to the skillet and cook for an additional 3-4 minutes until slightly softened.
  5. In a small bowl, whisk together the soy sauce, sambal oelek, rice vinegar, and brown sugar. Pour the sauce over the tofu and vegetables in the skillet.
  6. Add the cooked rice noodles to the skillet and toss to coat everything in the sauce.
  7. Remove the skillet from the heat and garnish with chopped green onions, cilantro, and chopped peanuts.
