Ingredients
- 1 package of firm tofu, drained and cubed
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cup snap peas
- 2 green onions, chopped
- 1/4 cup soy sauce
- 2 tbsp sambal oelek (chili paste)
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
Instructions
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the garlic and cook for 1 minute until fragrant.
- Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes.
- Add the red bell pepper and snap peas to the skillet and cook for an additional 3-4 minutes until slightly softened.
- In a small bowl, whisk together the soy sauce, sambal oelek, rice vinegar, and brown sugar. Pour the sauce over the tofu and vegetables in the skillet.
- Add the cooked rice noodles to the skillet and toss to coat everything in the sauce.
- Remove the skillet from the heat and garnish with chopped green onions, cilantro, and chopped peanuts.
