Hmong-inspired Sweet And Sour Tofu

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup pineapple chunks
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes and coat with cornstarch.
  2. Heat the vegetable oil in a large skillet over medium-high heat and fry the tofu until golden brown and crispy. Remove from the skillet and set aside.
  3. In the same skillet, sauté the garlic, onion, and bell peppers until they are slightly softened.
  4. Add the pineapple chunks, ketchup, rice vinegar, soy sauce, brown sugar, and the cornstarch-water mixture. Stir well and bring to a simmer until the sauce thickens.
  5. Return the crispy tofu to the skillet and toss to coat with the sweet and sour sauce. Season with salt and pepper to taste.
