Hmong-inspired Sweet And Sour Tofu

Ingredients
- 1 block of firm tofu, drained and cubed
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup pineapple chunks
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess water, then cut it into cubes and coat with cornstarch.
- Heat the vegetable oil in a large skillet over medium-high heat and fry the tofu until golden brown and crispy. Remove from the skillet and set aside.
- In the same skillet, sauté the garlic, onion, and bell peppers until they are slightly softened.
- Add the pineapple chunks, ketchup, rice vinegar, soy sauce, brown sugar, and the cornstarch-water mixture. Stir well and bring to a simmer until the sauce thickens.
- Return the crispy tofu to the skillet and toss to coat with the sweet and sour sauce. Season with salt and pepper to taste.
