Hmong-inspired Tofu Satay

Ingredients
- 1 block of firm tofu, pressed and cut into cubes
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1/4 cup creamy peanut butter
- 2 tablespoons lime juice
- 1 tablespoon sriracha
- 1/4 cup water
- Skewers for grilling
Instructions
- In a bowl, mix together the soy sauce, brown sugar, minced garlic, and curry powder. Add the tofu cubes and marinate for 15 minutes.
- While the tofu is marinating, prepare the peanut sauce by whisking together the peanut butter, lime juice, sriracha, and water in a small saucepan over low heat. Stir until smooth and creamy.
- Thread the marinated tofu cubes onto skewers and grill on a stovetop grill pan or outdoor grill for 5-7 minutes on each side, until lightly charred.
