Hāngī-inspired Lamb Roast (Whakapai Kōpī)
Whakapai Kōpī is a traditional New Zealand lamb roast recipe inspired by the Hāngī cooking method, which involves cooking food in an earth oven. This dish is perfect for a special occasion or a family gathering, as it brings the flavors of New Zealand to your table.
Ingredients
- 1 leg of lamb, bone-in
- 2 onions, sliced
- 4 cloves of garlic, minced
- 2 carrots, chopped
- 4 potatoes, peeled and quartered
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- Place the sliced onions, minced garlic, and chopped carrots in the bottom of a roasting pan.
- Rub the leg of lamb with olive oil, salt, and pepper, then place it on top of the vegetables in the roasting pan.
- Add the quartered potatoes around the lamb.
- Pour the chicken broth into the roasting pan.
- Cover the roasting pan with foil and place it in the preheated oven.
- Roast the lamb for 2 hours, then remove the foil and continue roasting for an additional hour or until the lamb is tender and golden brown.
- Let the lamb rest for 10 minutes before carving and serving with the roasted vegetables.
