Ingredients

  • 1 small Korean pumpkin, peeled, seeded, and diced
  • 1/2 cup sweet rice flour
  • 6 cups water
  • 1/2 cup sugar
  • Pinch of salt

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the diced pumpkin and cook until soft, about 15 minutes.
  3. In a small bowl, mix the sweet rice flour with 1 cup of water to make a slurry.
  4. Pour the slurry into the pot and stir well to combine.
  5. Add the sugar and a pinch of salt, then simmer for another 5 minutes, stirring constantly.
  6. Remove from heat and let it cool slightly before serving.
