Ingredients
- 2 lbs fresh mussels, cleaned and debearded
- 1 can (14 oz) coconut milk
- 3 tbsp green curry paste
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup fresh basil leaves
- 1 lime, cut into wedges
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the green curry paste and stir until fragrant, about 2 minutes.
- Add the red bell pepper, onion, garlic, and ginger. Cook for 5 minutes, stirring occasionally.
- Stir in the fish sauce and brown sugar.
- Add the mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.
- Remove from heat and stir in the fresh basil leaves.
- Serve the mussels and curry broth in bowls, garnished with lime wedges.
