Ingredients

  • 2 lbs fresh mussels, cleaned and debearded
  • 1 can (14 oz) coconut milk
  • 3 tbsp green curry paste
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup fresh basil leaves
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the coconut milk over medium heat.
  2. Add the green curry paste and stir until fragrant, about 2 minutes.
  3. Add the red bell pepper, onion, garlic, and ginger. Cook for 5 minutes, stirring occasionally.
  4. Stir in the fish sauce and brown sugar.
  5. Add the mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.
  6. Remove from heat and stir in the fresh basil leaves.
  7. Serve the mussels and curry broth in bowls, garnished with lime wedges.
