Hoi Nam Joong (oyster Omelette)

Ingredients

  • 6 fresh oysters
  • 3 eggs
  • 1 tablespoon potato starch
  • 1 tablespoon tapioca starch
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped scallions
  • 1/4 cup cilantro leaves
  • 1/4 cup sweet chili sauce

Instructions

  1. Shuck the oysters and set aside.
  2. In a bowl, whisk together the eggs, potato starch, tapioca starch, salt, and white pepper until smooth.
  3. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat.
  4. Pour the egg mixture into the pan and cook for 2 minutes.
  5. Add the oysters, scallions, and cilantro on top of the omelette.
  6. Flip the omelette and cook for an additional 2-3 minutes until golden brown.
  7. Slide the omelette onto a serving plate and drizzle with sweet chili sauce.
