Ingredients
- 6 fresh oysters
- 3 eggs
- 1 tablespoon potato starch
- 1 tablespoon tapioca starch
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tablespoons vegetable oil
- 1/4 cup chopped scallions
- 1/4 cup cilantro leaves
- 1/4 cup sweet chili sauce
Instructions
- Shuck the oysters and set aside.
- In a bowl, whisk together the eggs, potato starch, tapioca starch, salt, and white pepper until smooth.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat.
- Pour the egg mixture into the pan and cook for 2 minutes.
- Add the oysters, scallions, and cilantro on top of the omelette.
- Flip the omelette and cook for an additional 2-3 minutes until golden brown.
- Slide the omelette onto a serving plate and drizzle with sweet chili sauce.
