Holat (stuffed Grilled Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup diced tofu
  • 1/2 cup chopped onions
  • 1/2 cup diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, combine the cooked rice, tofu, onions, tomatoes, garlic, coriander, cumin, turmeric, salt, and pepper.
  4. Stuff the bell peppers with the rice and tofu mixture.
  5. Brush the stuffed bell peppers with olive oil.
  6. Place the bell peppers on the grill and cook for 20-25 minutes, turning occasionally, until the peppers are tender and slightly charred.
  7. Remove from the grill and let them cool for a few minutes before serving.
