Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the grill to medium heat.
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a bowl, mix the ground beef, onion, garlic, bell pepper, tomato, paprika, cumin, salt, and pepper.
  4. Stuff the hollowed-out zucchinis with the ground beef mixture.
  5. Brush the stuffed zucchinis with olive oil and place them on the grill.
  6. Grill for 10-12 minutes, turning occasionally, until the zucchinis are tender and the filling is cooked through.
  7. Remove from the grill and let them cool for a few minutes before serving.
