Hollow Puffed Bread With Spiced Water (pani Puri)

Ingredients

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup water
  • Oil for deep frying
  • 2 large potatoes, boiled and chopped
  • 1 cup boiled chickpeas
  • 1/2 cup tamarind chutney
  • 1/2 cup mint-coriander chutney
  • 4 cups water
  • 1 tsp black salt
  • 1 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 1/2 tsp chaat masala

Instructions

  1. In a bowl, mix together semolina, all-purpose flour, salt, and baking soda. Gradually add water and knead into a stiff dough. Cover and let it rest for 20 minutes.
  2. Divide the dough into small balls and roll out each ball into a small disc. Heat oil in a deep pan and fry the discs until they puff up and turn golden brown. Drain on paper towels and set aside.
  3. In a separate bowl, mix together water, black salt, roasted cumin powder, red chili powder, and chaat masala to make the spiced water.
  4. To assemble, gently make a hole in the center of each fried bread disc. Fill with a small amount of chopped potatoes and chickpeas. Pour in some spiced water, tamarind chutney, and mint-coriander chutney.
  5. Serve immediately and enjoy the burst of flavors in each bite!
