Ingredients

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
  2. In a large bowl, combine the ground beef, cooked rice, onion, garlic, salt, and pepper. Mix well.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Repeat with the remaining leaves and filling.
  4. In a separate pot, combine the tomato sauce, diced tomatoes, and chicken broth. Season with salt and pepper. Place the cabbage rolls in the pot, seam side down. Cover and simmer for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
  5. Serve the holubtsi hot, spooning the tomato sauce over the top.
