Holubtsi (sweet And Sour Cabbage Rolls)
Holubtsi, also known as sweet and sour cabbage rolls, are a traditional dish in Palatine cuisine. These delicious rolls are made by wrapping a flavorful filling in tender cabbage leaves and simmering them in a sweet and tangy tomato sauce.
Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 oz) tomato sauce
- 1/4 cup brown sugar
- 1/4 cup lemon juice
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 3-4 minutes, then carefully remove the softened outer leaves. Repeat until you have 12-14 leaves.
- In a large bowl, combine the ground beef, cooked rice, chopped onion, egg, salt, and pepper. Mix well.
- Place a spoonful of the beef mixture onto each cabbage leaf and roll up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
- In a separate bowl, mix together the tomato sauce, brown sugar, and lemon juice. Pour the sauce over the cabbage rolls.
- Cover the pot and simmer the cabbage rolls over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
