Holubtsi (sweet And Sour Cabbage Rolls)

Holubtsi, also known as sweet and sour cabbage rolls, are a traditional dish in Palatine cuisine. These delicious rolls are made by wrapping a flavorful filling in tender cabbage leaves and simmering them in a sweet and tangy tomato sauce.

Holubtsi (sweet And Sour Cabbage Rolls)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) tomato sauce
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 3-4 minutes, then carefully remove the softened outer leaves. Repeat until you have 12-14 leaves.
  2. In a large bowl, combine the ground beef, cooked rice, chopped onion, egg, salt, and pepper. Mix well.
  3. Place a spoonful of the beef mixture onto each cabbage leaf and roll up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
  4. In a separate bowl, mix together the tomato sauce, brown sugar, and lemon juice. Pour the sauce over the cabbage rolls.
  5. Cover the pot and simmer the cabbage rolls over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
