Holubtsi (ukrainian Stuffed Peppers)
Holubtsi, also known as Ukrainian Stuffed Peppers, are a traditional dish in Cossack cuisine. This hearty and flavorful meal is perfect for a cozy family dinner or a special occasion.
Ingredients
- 6 large bell peppers
- 1 cup rice
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the rice, ground beef, onion, garlic, crushed tomatoes, and salt and pepper.
- Stuff the bell peppers with the rice and beef mixture.
- Place the stuffed peppers in a large pot and pour the beef broth over them.
- Cover the pot and cook the peppers on the stovetop over medium heat for 45-50 minutes, or until the peppers are tender.
- Once cooked, garnish with fresh parsley and serve hot.
