Ingredients

  • 6 large bell peppers
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the rice, ground beef, onion, garlic, crushed tomatoes, and salt and pepper.
  4. Stuff the bell peppers with the rice and beef mixture.
  5. Place the stuffed peppers in a large pot and pour the beef broth over them.
  6. Cover the pot and cook the peppers on the stovetop over medium heat for 45-50 minutes, or until the peppers are tender.
  7. Once cooked, garnish with fresh parsley and serve hot.
