Honduran Chicken and Plantain Stew (Guiso de Pollo y Plátano)

Ingredients
- 2 lbs chicken, cut into pieces
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the tomatoes, cumin, paprika, and oregano. Cook for a few minutes until the tomatoes start to break down.
- Return the chicken to the pot and add the chicken broth. Bring to a simmer and cook for 30 minutes.
- Add the sliced plantains to the pot and continue to cook for another 20-30 minutes, or until the chicken is tender and the plantains are soft.
- Season with salt and pepper to taste. Serve the Guiso de Pollo y Plátano hot and enjoy!
