Honduran Chicken and Plantain Stew (Guiso de Pollo y Plátano)

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 ripe plantains, peeled and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
  3. Add the tomatoes, cumin, paprika, and oregano. Cook for a few minutes until the tomatoes start to break down.
  4. Return the chicken to the pot and add the chicken broth. Bring to a simmer and cook for 30 minutes.
  5. Add the sliced plantains to the pot and continue to cook for another 20-30 minutes, or until the chicken is tender and the plantains are soft.
  6. Season with salt and pepper to taste. Serve the Guiso de Pollo y Plátano hot and enjoy!
