Honduran Empanadas

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup cold water
- 1/4 cup vegetable oil
- 1 pound ground beef
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable oil for frying
Instructions
- In a large bowl, mix the flour and salt. Gradually add the water and vegetable oil, kneading until a smooth dough forms. Cover and let rest for 30 minutes.
- In a skillet, cook the ground beef, onion, bell pepper, and garlic until the beef is browned and the vegetables are tender. Add the cumin, paprika, salt, and pepper. Remove from heat and let cool.
- Divide the dough into 12 equal portions. Roll each portion into a circle and place a spoonful of the beef filling in the center. Fold the dough over the filling and crimp the edges to seal.
- Heat the vegetable oil in a deep skillet or pot to 350°F (175°C). Fry the empanadas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
