Honduran Stuffed Plantains (Plátanos Rellenos)

Ingredients

  • 4 ripe plantains
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the ends off the plantains and make a slit lengthwise, being careful not to cut all the way through.
  3. Place the plantains on a baking sheet and bake for 15-20 minutes, until the skins are black and the flesh is soft.
  4. While the plantains are baking, prepare the filling. In a skillet, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
  5. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned and fully cooked.
  6. Remove the plantains from the oven and let them cool slightly. Carefully peel off the skins.
  7. Using a spoon, create a cavity in each plantain, being careful not to split them open.
  8. Stuff the plantains with the meat filling and top with shredded cheese.
  9. Return the stuffed plantains to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  10. Serve the Plátanos Rellenos hot and enjoy!
